Smoked Pork Tacos

Smoked Pork Tacos
Create these delectable pork tacos with the envy of all of your neighbors as heavenly smells from your smoker entice them. Trust me, they are worth the wait!!!

Ingredients

  • Butt Roast, Pork
  • (1 Tablespoon) Smoked Paprika
  • (1 Tablespoon) Cumin
  • (1 Tablespoon) Garlic Powder
  • (1 teaspoon) Black Pepper
  • (1/4 teaspoon) Crushed Red pepper Flakes
  • (1 Teaspoon) Sea Salt
  • (2 Tablespoons) Olive oil
  • (1 1/2 cups) Orange Juice
  • (juice of 3 limes) Lime Juice - use fresh
  • (1/2 cup) Pineapple juice
  • (1 large, chopped) Jalapeno
  • (1 medium, chopped) Onion
  • (4 large cloves, minced) Garlic

Directions

Mix together all spices to create the rub for the pork.  Add olive oil to create a paste.  Place pork roast into a baking dish. Massage rub paste into the meat.  Cover with plastic wrap and place in fridge overnight.  In the morning, using your smoker's instructions, bring smoker to smoke setting.  Remove pork roast from baking dish and place directly onto smoker grate.  Allow to smoke (most smokers are at about 250 degrees) for 3 hours.  Mix together orange juice, lime juice and pineapple juice, fresh jalapenos, onion and garlic. Set aside.  Remove pork from smoker grate and place into a clean baking dish or sheet pan with deep sides that would be safe to place back on smoker at a temperature of 275 degrees.  Increase the temperature of your smoker to 275-300 degrees.  Pour citrus sauce into pan with pork and cover tightly with foil making sure to cinch the sides closed.  Place foil covered baking dish with pork and citrus sauce back onto 275 degrees smoker.  Continue cooking for 4-6 hours depending on the size of your roast.   It smells fabulous though so your neighbors will enjoy the cooking process :)  

Your roast should be fork tender and easily shred with a fork.  Be sure to allow it to rest for about 30-45 minutes before shredding.  After shredding, pour some of the cooking liquids over the pork to maintain moisture.  Serve on warm corn or flour tortillas with your favorite toppings. Enjoy!
