Ingredients

Directions

  1. Prep the skillet: Heat lard or tallow in a large cast iron skillet until very hot.
  2. Sauté aromatics: Add onions, garlic, and mushrooms. Sauté until softened and fragrant, then transfer to a bowl and set aside.
  3. Sear shanks: Season shanks with salt and pepper. Sear on both sides until browned (about 3–4 minutes per side). Remove and set aside.
  4. Deglaze: Turn heat down to medium, pour in ½ cup white wine, and scrape up any browned bits from the pan.
  5. Combine: Add the sautéed vegetables back to the skillet and simmer together for a minute or two.
  6. Slow cook: Transfer everything — vegetables, deglazing liquid, and shanks — to a crockpot. Add 1 cup water or broth and a splash more white wine if desired.
  7. Cook: Cover and cook on low for 6–8 hours, until shanks are fork-tender.
  8. Serve: Spoon over wild rice and ladle some of the cooking liquid on top.
