Ingredients
- (4) Shank Meat, Beef
- (1 tbsp) Beef Tallow - pint
- (1 cup) Onion, diced
- (5 cloves) Garlic, minced
- (1 cup) Mushrooms, chopped
- (1/2 cup (plus more for crockpot)) Dry White Wine
- (1 cup) Beef Broth
- (for serving) Wild Rice
Directions
- Prep the skillet: Heat lard or tallow in a large cast iron skillet until very hot.
- Sauté aromatics: Add onions, garlic, and mushrooms. Sauté until softened and fragrant, then transfer to a bowl and set aside.
- Sear shanks: Season shanks with salt and pepper. Sear on both sides until browned (about 3–4 minutes per side). Remove and set aside.
- Deglaze: Turn heat down to medium, pour in ½ cup white wine, and scrape up any browned bits from the pan.
- Combine: Add the sautéed vegetables back to the skillet and simmer together for a minute or two.
- Slow cook: Transfer everything — vegetables, deglazing liquid, and shanks — to a crockpot. Add 1 cup water or broth and a splash more white wine if desired.
- Cook: Cover and cook on low for 6–8 hours, until shanks are fork-tender.
- Serve: Spoon over wild rice and ladle some of the cooking liquid on top.
