Ingredients
- (1) Ham Hock, Smoked
- (16 oz) Dried Navy Beans
- (1 cup) Diced Onion
- (1 cup) Diced Celery
- (5 cloves) Minced Garlic
- (1/4 tsp) Thyme
- (1 tsp) Sea Salt
- (1/2 tsp) Black Pepper
- (6 cups) Chicken Stock
- (1 cup) Diced Carrot
Directions
- Soak the dried beans in 8 cups of water overnight. Then drain and discard water.
1. In a 5-quart slow cooker, combine navy beans, ham hock, onion, celery, garlic, thyme, salt, and black pepper.
2. Add enough chicken stock to cover the beans by about 1 inch, adding more stock as needed during cooking.
3. Cook on low for 6 hours or until vegetables and beans are tender.
4. During the final hour of cooking, stir in the carrots and let cook until both the carrots and beans are tender.
5. Once cooking is complete, remove the ham bone, shred any remaining ham from it, and discard the bone and gristle.
