Ingredients
- (1 lb) Ground Lamb
- (1 tbsp) Olive Oil
- (1/4 cup) Onion, diced
- (4) Garlic Cloves, minced
- (1 tsp) Paprika
- (1 tsp) Allspice
- (1/2 tsp) Red Pepper Flakes
- (1/4 tsp) Ground Ginger
- (to taste) Salt & Pepper
- (1/4 cup) Fresh Mint, chopped
- (1/4 cup) Flat Leaf Parsley, chopped
Directions
For the Bowls
- 1 cup cooked rice (turmeric rice or your favorite variety)
- 1 tomato, diced
- 1 cucumber, peeled and diced
- 1 cup hummus
- 1 cup crumbled feta cheese
- Pita bread (optional)
- Extra mint and parsley for garnish
Make the Spiced Lamb
- Heat a large skillet over medium heat and add the olive oil.
- Add the onion and garlic and sauté for about 5 minutes, until softened.
- Add the ground lamb and cook, breaking it apart, until browned and fully cooked.
- Stir in paprika, allspice, red pepper flakes, ginger, salt, and pepper. Cook for 1–2 minutes until fragrant.
- Remove from heat and stir in the fresh mint and parsley.
Assemble the Bowls
- Divide the cooked rice between bowls.
- Top with the spiced ground lamb, diced tomatoes, cucumber, hummus, and feta.
- Finish with extra mint and parsley.
- Serve with warm pita if desired.
