Candied Sweet Potatoes & Apples

This sweet and savory dish combines tender sweet potatoes and crisp apples, baked in a rich blend of brown sugar and apple cider. The perfect balance of sweetness and warmth, making it an ideal side for your holiday meals!

Ingredients
- (2 lbs) Sweet Potatoes, peeled
- (1 cup, firmly packed) Light Brown Sugar
- (1 cup) Butter
- (1/2 cup) Apple Cider
- (1/4 tsp) Salt
- (1 tsp) Vanilla Extract
- (3) Large Cooking Apples, cored and cut into 1/2" rings
Directions
- Cut sweet potatoes in half. Place in pot and cover with water, boil for 10 minutes. Drain and cool. Cut into 1/2" slices.
- Combine brown sugar, butter, apple cider, and salt in a medium sauce pan.
- Bring to a boil for 10 minutes. Remove from heat and stir in the vanilla extract.
- Layer sweet potato and apple slices in a greased 9" x 13" baking dish. Pour glaze over the slices.
- Bake, uncovered, at 400 degrees for 1 hour or until potatoes are candied and glaze is thickened, basting with glaze after 30 minutes.
