  1. Preheat your smoker or grill to 250°F.
  2. Toss pork belly cubes with seasoning to coat all sides.
  3. Smoke or grill (indirect heat) for 2.5–3 hours, until deeply browned and tender.
  4. Transfer to a foil pan. Drizzle with BBQ sauce, honey/maple, and brown sugar. Toss to coat.
  5. Cover the pan with foil and return to grill/smoker for 45–60 minutes, until bubbling and caramelized.
  6. Uncover and cook for 15–20 more minutes to let the glaze thicken.
