Ingredients
- (3 lbs. (skin removed & cut into 1.5" cubes)) Belly, Pork (Pork Fresh Side)
- (2 tbsp) Dizzy Pig Seasoning: Dizzy Dust All Purpose BBQ Rub
- (1/2 cup) BBQ Sauce
- (2 tbsp) Honey of Maple Syrup
- (2 tbsp) Coconut Sugar or Brown Sugar
- (Optional, for tang) Apple Cider Vinegar or Pineapple Juice
Directions
- Preheat your smoker or grill to 250°F.
- Toss pork belly cubes with seasoning to coat all sides.
- Smoke or grill (indirect heat) for 2.5–3 hours, until deeply browned and tender.
- Transfer to a foil pan. Drizzle with BBQ sauce, honey/maple, and brown sugar. Toss to coat.
- Cover the pan with foil and return to grill/smoker for 45–60 minutes, until bubbling and caramelized.
- Uncover and cook for 15–20 more minutes to let the glaze thicken.
- Serve hot, with toothpicks or buns for sliders!
