Ingredients
- (2 Lamb Racks) Lamb French Loin Rack
- (10 Cloves) Garlic Cloves
- (1/4 cup) Extra Virgin Olive Oil
- (1 cup (lightly packed)) Parsley
- (2 tsp) Dry Rosemary
- (1/2 tsp) Red Pepper Flakes
- (to taste) Kosher Salt
- (to taste) Ground Black Pepper
Directions
Mix together olive oil, minced garlic, fresh rosemary, parsley, salt, pepper, and a pinch of red pepper flakes.
Rub the herb mixture generously over the entire lamb rack, pressing it into the meat so the flavor really sticks.
Preheat the oven to a high temperature and place the lamb on a roasting pan, fat side up.
Roast until the outside is beautifully browned and the inside is tender and juicy, about 15–20 minutes depending on doneness.
Remove from the oven and let the lamb rest for about 10 minutes before slicing.
Cut between the bones into individual chops and serve warm with your favorite holiday sides.
