Garlic Herb Crusted Rack of Lamb
This rack of lamb recipe keeps things simple and comforting — a French-trimmed lamb loin rack is rubbed with garlic, fresh herbs, and olive oil, then roasted hot and fast until tender and flavorful. Ingredients

  • (2 Lamb Racks) Lamb French Loin Rack
  • (10 Cloves) Garlic Cloves
  • (1/4 cup) Extra Virgin Olive Oil
  • (1 cup (lightly packed)) Parsley
  • (2 tsp) Dry Rosemary
  • (1/2 tsp) Red Pepper Flakes
  • (to taste) Kosher Salt
  • (to taste) Ground Black Pepper

Directions

  • Take the lamb rack out of the fridge and let it sit at room temperature for about 30 minutes. This helps it cook evenly.
  • Mix together olive oil, minced garlic, fresh rosemary, parsley, salt, pepper, and a pinch of red pepper flakes.

  • Rub the herb mixture generously over the entire lamb rack, pressing it into the meat so the flavor really sticks.

  • Preheat the oven to a high temperature and place the lamb on a roasting pan, fat side up.

  • Roast until the outside is beautifully browned and the inside is tender and juicy, about 15–20 minutes depending on doneness.

  • Remove from the oven and let the lamb rest for about 10 minutes before slicing.

  • Cut between the bones into individual chops and serve warm with your favorite holiday sides.
