- (1 lb) MIld Italian Sausage Link
2 Tbsp butter, oil, or lard
½ lb sweet or hot italian sausage links
¾ cup uncooked orzo pasta
½ Tbsp chopped chives
½ tsp oregano
1 ½ cups chicken stock (homemade if you have it on hand)
¼ cup grated parmesan
¼ cup shredded mozzarella
Heat fat of choice in large skillet over medium-high heat. Add sausage and cook until browned, about 8 minutes. Remove sausage from the pan and cut into ½ inch pieces.
Add orzo and cooked sausage into pan, stir until orzo begins to turn golden, about 2 minutes. Add chives and oregano; stir. Pour in chicken stock.
Bring to a low boil; reduce heat, cover, and let simmer over low heat until pasta is al dente, about 20 minutes.
Remove from heat; stir in Parmesan and mozzarella cheeses. Top with additional chives (optional).
Serving Suggestions: Add frozen or fresh spinach prior to step #3.
