Carbonara Inspired Pasta
Indulge in our farm-inspired twist on a classic! This Carbonara-style pasta features our savory pancetta, rich farm-fresh eggs, garlic, onion, and a generous sprinkle of Pecorino Romano cheese. Creamy, flavorful, and comforting—it's the perfect dish to warm up your weeknight dinners.

Ingredients

  • (1 lb) Pancetta
  • (2 whole, room temp) Eggs
  • (4, room temp) Egg Yolks
  • (3 ounces) Freshly Grated Pecorino Romano cheese
  • (To taste, a lot) Freshly Ground Pepper
  • (2 tsp) Salt
  • (1 cup, reserved) Pasta Water
  • (1 medium) Onion, diced
  • (3 cloves) Garlic, minced
  • (1 lb) Spaghetti

Directions

  1. In a medium bowl or liquid measuring cup, whisk together the eggs, egg yolks, grated cheese, and plenty of freshly ground black pepper.
  2. Boil 8 cups of water and cook the pasta until it is just shy of al dente. Remember to reserve one cup of the starchy water!
  3. Remove the smoked skin from the pancetta and dice the meat. Toss into a large saute pan over medium heat. Cook until brown and crispy, then transfer to a paper towel lined plate with a slotted spoon. 
  4. Do not drain the grease from the pan. Add your diced onions, cooked until translucent. Add the minced garlic, cook until fragrant. Remove from heat.
  5. It's time to temper your egg mixture. Grab your whisk and your reserved pasta water. While whisking vigorously, slowly drizzle the pasta water into the eggs. Do not stop whisking until you are finished adding the water.
  6. Add your cooked pasta to the saute pan and begin tossing. Slowly drizzle the egg mixture into the pasta, while continuing to toss. Add the pancetta back in and toss to combine. Serve immediately.
