Apple Cider Glazed Pork Loin
This Pork Loin with Apple Cider Glaze is the perfect way to celebrate fall cooking. A juicy pork loin roast is rubbed with herbs, roasted until tender, and brushed with a sweet and tangy apple cider glaze made with Dijon mustard, honey (or brown sugar), and apple cider vinegar. The glaze caramelizes beautifully, giving every slice incredible flavor. Pair it with roasted root vegetables or mashed sweet potatoes for a hearty, seasonal meal that’s just as fitting for a cozy weeknight as it is for entertaining.

Ingredients

  • (2-3 lbs) Loin Roast, Pork
  • (2 tbsp) Olive Oil
  • (1 tsp) Salt
  • (1/2 tsp) Black Pepper
  • (1 tsp dried or 2 tsp fresh) Thyme
  • (1 cup) Apple Cider
  • (2 tbsp) Dijon Mustard
  • (2 tbsp) Brown Sugar or Honey
  • (1 tbsp) Apple Cider Vinegar

Directions

  • Preheat oven to 375°F. Pat pork loin dry and rub with olive oil, salt, pepper, and thyme.
  • Place in a roasting pan and roast for about 45–60 minutes, or until internal temperature reaches 145°F.
  • While the pork roasts, make the glaze: in a small saucepan, combine apple cider, mustard, brown sugar or honey, and vinegar. Simmer over medium heat until reduced by half (about 10 minutes). 
  • During the last 10 minutes of roasting, brush half the glaze over the pork.
  • Let the pork rest 10 minutes before slicing. Drizzle with remaining glaze and serve.
  • Serving Tip: Pair with roasted root vegetables or mashed sweet potatoes for the ultimate fall meal.
