Our livestock management philosophy is simple. Tender meat is directly related to the amount of time any animal stays in one specific area. We operate on a rigid pasture rotation to allow the animals to consume as much fresh green growth as possible. Quickly moving them to a new area allows the forage to rest and grow. Our pastures consist of alfalfa, crimson clover and other grasses. In the fall, the hogs are moved into hardwood forest to feed from acorns and other forage. Although the majority of their diet is provided by grazing in the pasture and forest, we do supplement with several different types of non - GMO grains and soy — always hormone-, antibiotic- and steroid-free.

THE PIGS





LARGE BLACKS


We have a steady supply of Large Blacks in stock.  The Large Black breed of pig just came off the endangered species list.  There are 300 Breeding Stock in the world.  

It takes 11 months from birth for the pigs to grow to 300 lbs.  Our pigs are pasture raised to 100 lbs and forest finished to 300+ lbs.  Our pigs feed on natural forage and are given a supplemental feed of corn, barley, roasted soybean, and minerals.

Large Black meat is very tender.  It is incredibly flavorful with lots of fat throughout.  


MULE FOOT


We have a smaller supply of Mule Foot pigs available.  They are a critically endangered species, there are less than 100 breeding stock in the world.  Mule Foot are one of the oldest known pig breeds, documented in the Old Testament of the Bible.

It takes 14 months from birth for the pigs to grow to to 300 lbs.  Our pigs are pasture raised to 100 lbs and forest finished to 300+ lbs.  Our pigs feed on natural forage and are given a supplemental feed of corn, barley, roasted soybean, and minerals.

Mule Foot pigs also have very flavorful meat with lots of fat throughout.  They have a smaller loin eye.  Mule Foot hams are one of the best hams in the world to cure.
